Neely's Low Calorie Delicious Chili

1 - 1.25 lb ground turkey
6 cans kidney beans (dark or light red)
6 cans tomato sauce
1 - 2 onions
1 - 2 green bell peppers
3 packets mild chili seasoning
1/3 cup water
optional: low fat shredded mozzarella
optional: fat free sour cream
optional: fat free saltine crackers

In large pot, brown (er, whiten) ground turkey. Dice onion and bell pepper. Once turkey is fully cooked, add onion, bell pepper, and water. Turn heat up and allow water to boil off, thus softening the veggies without the time it takes to slow cook. Once water boils off, add tomato sauce, kidney beans, and as much chili seasoning as you like. Stir, cover, and simmer for anywhere from ten minutes to an hour - it's up to you. Serve with low fat shredded mozzarella cheese and a dollop of fat free sour cream. Fat free saltines make a good dipper. Delicious and healthy! Makes enough for a family of four to eat two to three meals, so it's both easy and economical. Approximately 260 calories per cup.

Neely's Low Fat Easy Meatloaf

I'm new to this site. I will be posting recipes I enjoy here - unless they're family secrets. ;-) If I put "Neely's" in front of the title, I came up with the recipe myself or significantly altered it in some way. Hope you enjoy my site!

1 lb. ground beef
1/4 cup diced onion
1 slice white bread
1 egg
ketchup
Splenda

Preheat oven to 325 degrees. Soak slice of bread in beaten egg. In large mixing bowl, use hands to mix together beef and onion. Add bread and remaining egg. Continue to mix with hand, allowing bread to fall apart. Line bread/loaf pan with heavy duty aluminum foil. Pour meat mixture into pan and form into a loaf. Mix about 1 cup ketchup with as much Splenda as preferred, usually 1/4 cup or so. Top meatloaf with ketchup mixture. Bake at 325 for 60 minutes, or one hour. Let cool for ten minutes before slicing. Very non-greasy, low-cal, and delicious. The Splenda in the ketchup tempers the slight spice of the onion.
